Hardboiled eggs come in handy day after day. They make a perfect snack to send my son off to child care or sliced and added to a salad for a little extra nutrition. Scoop out the yolks, blend with melted butter and some seasonings and you've got a batch of Angeled Eggs to take to your next potluck.
Everybody has their own way of cooking hardboiled eggs. After years of working in restaurants, I've dialed in a recipe that comes out consistently perfect every time!
In regards to peeling eggs, I have found that older eggs tend to peel easier. There is nothing worse then hard boiling a bunch of eggs and having the peels destroy the egg whites while trying to remove.

- 6-12 eggs
- Cold water to cover
- Place the eggs in a large pan. Cover with cold water then place onto the stove top.
- Bring the water to a boil and allow to boil for 1 minute before removing from the heat, covering and letting the eggs rest for 5 minutes. For slightly undercooked yolks, let sit for about 3 minutes.
- When the 5 minutes is up, pour out the hot liquid and run under the sink with cold water until the eggs have cooled completely.
- Peel immediately or place in the fridge until further use.
