Parsnip Hummus

I recently whipped up this recipe for the Clean Eats newsletter, which features my creations every Wednesday on their blog. Since making this for the photo shoot, I have been making this delicious side dish on a weekly basis, especially now that our neighboring farm, Peacemeal farm has just dug up their overwintered parsnips from the newly thawed grounds. 

This dish has all the flavor of traditional hummus, but with a sweet-earthy note from the parsnips.
