Anna Sweet Potatoes

Pommes Anna is a classic French side dish that consists of sliced and seasoned potatoes cooked in butter until crispy on the outside, and soft on the inside. 

The recipe below is a simple twist on the classic recipe, utilizing sweet potatoes instead of potatoes. The results are similar, with maybe a touch more of sweetness coming from the sweet potatoes. 

With minimal seasonings you can serve this along with roasted chicken, your favorite vegetables, or with baked haddock w/ hollandaise.

Anna Sweet Potatoes

  • 1 large sweet potato
  • 1/4 cup ghee or butter
  • sea salt
  • freshly cracked black pepper


Preheat the oven to 375°F

First, use a sharp knife or mandolin to thinly slice the sweet potatoes. 

Next, heat a 8-9 inch cast iron skillet over medium-high heat. Add a few spoonfuls of butter or ghee, then once hot, fan the sweet potato slices in a circle and continue until there are no more slices left. Cook for a few minutes before placing the pan in the oven. 

Bake for about 20-30 minutes, or until you can pierce through the potatoes easily with a knife. To help keep the potatoes from curling up, you can place a small plate on top of the potatoes. This will also help caramelize the bottom layer as well. 

Remove from the oven then carefully flip the "cake" onto a cutting board or serving platter. An off-set spatula may be needed to loosen up any bits stuck to the pan. 

Cut into wedges and serve.
